Ingredients
- 1 russet potato pealed and diced
- 2 tbsp coconut oil
- ¼ cup onion finely diced
- ½ cup frozen peas and carrots
- ½ tsp garam masala
- ½ tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp sugar
- 12 wonton wrappers
- cooking spray
Instructions
- Preheat air fryer to 350°.
- Place diced potato and 1/2 cup of water in a saute pan (or high sides frying pan). Cook until soft and add coconut oil, when melted add onion.
- When onion is cooked add the peas and carrots and cook through. Add garam masala, chili powder, salt, salt, pepper, and sugar.
- Using a small bowl of water, wet finger tip to moisten outside edge of wonton wrapper. Moisten wrapper edges with water. Place about 1 tablespoon potato filling into on side of wrapper. Fold 1 corner of wrapper over filling, forming a triangle. Seal edges of triangle. Repeat with remaining wrappers and filling.

- Place samosas in a single layer on a cooking sprayed sheet pan. Spritz samosas with cooking spray. Cook until golden brown, 10 minutes, turning once.
