Mini-Samosas

Ingredients

  • 1 russet potato pealed and diced
  • 2 tbsp coconut oil
  • ¼ cup onion finely diced
  • ½ cup frozen peas and carrots
  • ½ tsp garam masala
  • ½ tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp sugar
  • 12 wonton wrappers
  • cooking spray

Instructions

  • Preheat air fryer to 350°.
  • Place diced potato and 1/2 cup of water in a saute pan (or high sides frying pan). Cook until soft and add coconut oil, when melted add onion.
  • When onion is cooked add the peas and carrots and cook through. Add garam masala, chili powder, salt, salt, pepper, and sugar.
  • Using a small bowl of water, wet finger tip to moisten outside edge of wonton wrapper. Moisten wrapper edges with water. Place about 1 tablespoon potato filling into on side of wrapper. Fold 1 corner of wrapper over filling, forming a triangle. Seal edges of triangle. Repeat with remaining wrappers and filling.
  • Place samosas in a single layer on a cooking sprayed sheet pan. Spritz samosas with cooking spray. Cook until golden brown, 10 minutes, turning once.
