- 1 russet potato pealed and diced
- 2 tbsp coconut oil
- ¼ cup onion finely diced
- ½ cup frozen peas and carrots
- ½ tsp garam masala
- ½ tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp sugar
- 12 wonton wrappers

Preheat air fryer to 350°.
Place diced potato and 1/2 cup of water in a saute pan (or high sides frying pan). Cook until soft and add coconut oil, when melted add onion.
When onion is cooked add the peas and carrots and cook through. Add garam masala, chili powder, salt, salt, pepper, and sugar.
Using a small bowl of water, wet finger tip to moisten outside edge of wonton wrapper. Moisten wrapper edges with water. Place about 1 tablespoon potato filling into on side of wrapper. Fold 1 corner of wrapper over filling, forming a triangle. Seal edges of triangle. Repeat with remaining wrappers and filling.
Place samosas in a single layer on a cooking sprayed sheet pan. Spritz samosas with cooking spray. Cook until golden brown, 10 minutes, turning once.
