Ingredients
- 1/4 cup diced bacon 2 thick slices
- 3 large potatoes peeled and roughly chopped
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 can diced green chilis
- 1 can creamed corn
- 1 cup frozen sweet corn
- 1 cup water
- 1/2 tsp salt
- 1 tsp ground black pepper
- 1/2 tsp red pepper flake
- 1 can lite coconut milk
Instructions
- Gather all ingredients.
- Cook bacon in a large pot over medium-high heat until crisp, 5 to 7 minutes.
- Add potatoes, onion, and garlic to the pot; cook, stirring occasionally, for 5 minutes. Add green chilis, corn, water, salt, pepper, red pepper flake, and coconut milk; bring to a boil. Reduce the heat to low, cover the pot and simmer, stirring frequently, until potatoes are tender, about 20 minutes.
