Ingredients

  • 1/4 cup diced bacon 2 thick slices
  • 3 large potatoes peeled and roughly chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced green chilis
  • 1 can creamed corn
  • 1 cup frozen sweet corn
  • 1 cup water
  • 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1/2 tsp red pepper flake
  • 1 can lite coconut milk

Instructions

  • Gather all ingredients.
  • Cook bacon in a large pot over medium-high heat until crisp, 5 to 7 minutes.
  • Add potatoes, onion, and garlic to the pot; cook, stirring occasionally, for 5 minutes. Add green chilis, corn, water, salt, pepper, red pepper flake, and coconut milk; bring to a boil. Reduce the heat to low, cover the pot and simmer, stirring frequently, until potatoes are tender, about 20 minutes.
