Ingredients

Dressing

  • ½ Cup extra virgin olive oil
  • 1 lemon
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp rosemary
  • 4 cloves garlic minced
  • cracked pepper

Salad

  • 1 head cauliflower cut into bite size pieces
  • 8 oz mozzarella balls
  • 1 Cup grape tomatoes
  • 1 Cup fresh spinach rough chopped
  • 1 red onion diced
  • ½ Cup black olives sliced
  • ½ Cup pepperoncini
  • 4 oz hard salami chopped
  • 4 oz pepperoni chopped

Instructions

Dressing

  • In a small bowl, whisk evoo, juice and zest of one lemon, salt, oregano, basil, rosemary, and garlic until we’ll combined.

Salad

  • Place chopped cauliflower in covered bowl with 2 tablespoons of water and microwave for two minutes. Drain.
  • In a large bowl, mix the cauliflower, mozzarella balls, tomatoes, spinach, onion, pepperoncini, hard salami, and pepperoni.
