Mary’s Handwritten Cauliflower Salad

Dressing
- ½ Cup extra virgin olive oil
- 1 lemon
- 1 tsp salt
- 1 tsp oregano
- 1 tsp basil
- 1 tsp rosemary
- 4 cloves garlic minced
- cracked pepper
Salad
- 1 head cauliflower cut into bite size pieces
- 8 oz mozzarella balls
- 1 Cup grape tomatoes
- 1 Cup fresh spinach rough chopped
- 1 red onion diced
- ½ Cup black olives sliced
- ½ Cup pepperoncini
- 4 oz hard salami chopped
- 4 oz pepperoni chopped
Dressing
In a small bowl, whisk evoo, juice and zest of one lemon, salt, oregano, basil, rosemary, and garlic until we’ll combined.
Salad
Place chopped cauliflower in covered bowl with 2 tablespoons of water and microwave for two minutes. Drain.
In a large bowl, mix the cauliflower, mozzarella balls, tomatoes, spinach, onion, pepperoncini, hard salami, and pepperoni.
