Cheesy Cauliflower and Kale Bake

Ingredients

  • 1 head cauliflower
  • 1 bunch kale
  • 6 oz gouda
  • ¾ Cup low fat sour cream
  • 1 tsp ground fenugreek
  • 1 tsp chile flake
  • salt and pepper

Instructions

  • Remove the kale from the stalks. Chop the kale, stalks, and cauliflower into small pieces (approximately ½ inch). Add the veggies to a bowl.
  • Add in the sour cream, cheese, fenugreek, chile flake, salt, and pepper. Stir well.
  • Portion into a 11x7 casserole dish and bake at 350 for 1 hour.

Notes

Instead of using the chile flake we used sriracha gouda and it turned out wonderful.
