Greek Chicken Rice Bowls

Ingredients

Chicken Marinade

  • 4 chicken breasts
  • ⅓ cup plain greek yogurt
  • ¼ cup extra virgin olive oil
  • 1 tbsp paprika
  • 2 tsp oregano
  • 1 tsp salt
  • 1 tsp thyme
  • 8 garlic cloves minced
  • 1 tbsp Better than Bouillon, roasted chicken
  • ½ lemon juiced
  • 2 tbsp olive oil

Greek Pilaf

  • 1 tbsp butter
  • 2 tbsp olive oil
  • 1 large yellow onion diced
  • 5 garlic cloves minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp tumeric
  • 1 ½ cups long-grain white rice
  • 1 tbsp Better than Bouillon, roasted chicken
  • 3 cups water
  • ¼ cup fresh parsley chopped
  • ½ lemon

Tzaziki

  • 1 cup plain greek yogurt
  • 1 ½ tbsp fresh dill finely chopped
  • ¼ cup cucumber grated & hand-squeezed dry
  • 1 tbsp red wine vinegar
  • 3 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp salt

Greek Salad

  • 1 cup cherry tomatoes halved
  • 1 cup cucumber quartered & sliced
  • ½ cup red onion thinly sliced
  • ½ cup feta cheese
  • ½ tsp dijon mustard
  • 1 tsp oregano salt, black pepper
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • 3 tbsp red wine vinegar
  • 1 garlic clove minced

Instructions

Chicken Marinade

  • Combine the chicken with the marinade ingredients. Mix then marinate for as long as your patience can handle.
  • Prep the ingredients for the pilaf and tzatziki.

Greek Salad and Tzatziki

  • Combine all of the salad ingredients in one bowl & all of the tzatziki in another.

Chicken & Greek Pilaf

  • Heat a large pan over medium-high heat, add olive oil. Cook until golden (about 5 to 7 mins per side) and a thermometer reads 165℉. Remove and rest.
  • Reduce heat to medium-low. Add butter, olive oil, and onion; cook until soft. Add garlic & spices, cook for 1 to 2 mins. Add rice, and toast for 2 mins.
  • Pour in the hot water with the dissolved Better Than Bouillon, stir and bring to a boil. Cover, reduce heat to low, & simmer for 20 mins. Add fresh parsley and lemon juice.
  • Assemble the bowls.
