Cannellini Bean Salad

  • 2 15 oz cans cannellini beans rinsed
  • 1 pint cherry tomatoes halved
  • ½ red onion diced
  • 1 bell pepper diced
  • C fresh parsley chopped
  • C olive oil
  • C red wine vinegar
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ C crumbled feta


  • Add all the ingredients to a large bowl and mix it together well. Season to taste with salt and pepper.
