- 2 15 oz cans cannellini beans rinsed
- 1 pint cherry tomatoes halved
- ½ red onion diced
- 1 bell pepper diced
- ⅛ C fresh parsley chopped
- ⅓ C olive oil
- ⅙ C red wine vinegar
- ½ tsp salt
- ½ tsp pepper
- ¼ C crumbled feta
- Add all the ingredients to a large bowl and mix it together well. Season to taste with salt and pepper.
