Ingredients
- 1 head cauliflower
- 1 bunch kale
- 6 oz gouda
- ¾ Cup low fat sour cream
- 1 tsp ground fenugreek
- 1 tsp chile flake
- salt and pepper
Instructions
- Remove the kale from the stalks. Chop the kale, stalks, and cauliflower into small pieces (approximately ½ inch). Add the veggies to a bowl.
- Add in the sour cream, cheese, fenugreek, chile flake, salt, and pepper. Stir well.
- Portion into a 11×7 casserole dish and bake at 350 for 1 hour.
Notes
Instead of using the chile flake we used sriracha gouda and it turned out wonderful.

This turned out really tasty and comforting, especially after I added a bit more cheese (highly recommend). The cauliflower and kale held up well, and the whole dish came together as a cheesy, satisfying bake; I’d make again.
